Vino Blanco

This is a cool one. Another cocktail from Barrio Costero's graveyard. Our bartender, Trevor, wanted to feature this as part of a series highlighting cocktails made with wine, beer, or bubbles (our term for any sparkling wine). Pip designed it to look like a glass of white wine, hence the name. We know, you just slid off your chair. You're welcome.
We also get to use Cocchi Americano again, which we introduced in our first class. We were operating in a time when people couldn't and didn't want to go out, so we really tried to keep these sessions economically friendly and logistically simple. Our goal was to showcase the variety of cocktails you could accomplish, even with a limited bar.
VINO BLANCO
¾ OZ VODKA
¾ OZ COCCHI AMERICANO
¾ OZ ELDERFLOWER LIQUEUR
½ OZ HONEY SYRUP (PG 48–49)
3 DASHES LEMON BITTERS
2 OZ CAVA OR SPARKLING WINE
GARNISH: LEMON PEEL
Combine all ingredients, except sparkling wine, in a mixing glass. Add enough ice to cover ingredients. Stir for 15 seconds. Strain into wine glass. Top with sparkling wine. Express lemon peel over cocktail and discard.
