Punch Pip in the Face

At this point in our sessions, our students were advancing and we were becoming pretty comfortable teaching them a series of techniques in one recipe. We had muddled, dry shaken with egg whites, and opened many a bottle of bubbles. So we needed to give them the ultimate test: a recipe that combines them all. 


Here’s a shocker...there’s tequila in this one (we reeeeaaaallly like tequila). But, it’s a good cocktail to experiment with other base spirits, too: gin, bourbon, scotch—just go for it, honestly.

"The goal in teaching this cocktail was to have a single serving, punch style cocktail with the elements of a light and fluffy sour. But, the name really comes down to one certainty. If I added this drink on any of our cocktail menus, the bartender who would have the pleasure of making 100 of these on a busy Saturday night would, without a doubt, want to punch me in the face."

 

Punch Pip in the Face

2 OZ SILVER TEQUILA OR MEZCAL 

¾ OZ FRESH LEMON JUICE 

½ OZ PINEAPPLE JUICE 

½ OZ SIMPLE SYRUP

3–4 BLACKBERRIES 

EGG WHITE: 1 LARGE OR 1 OZ 

OPTIONAL: 2 OZ SPARKLING WINE 


Muddle blackberries in shaker with simple syrup. Dry Shake: Combine remaining ingredients, except sparkling wine, in shaker WITHOUT ICE. Shake vigorously for 20 seconds. Add ice, seal, and shake for an additional 10 seconds. Double strain into coupe glass. Optional: top with 2oz sparkling wine.
