"Sometimes a drink is more of a moment than a flavor. Three weeks into quarantine I thought back to that trip to Mexico, motivated to share my experiences with our class and create a cocktail that could tell a story inspired by my fellow travelers. I remembered the rooftop and the alluring colors of the drinks that seduced us as we admired the sky’s reflection off the sea.


Makai is a Hawaiian term that means, toward the ocean . Whether it’s coming home or visiting my friends out west, for me, life is good toward the ocean. This drink is dedicated to that moment, that group of people, and how fiercely I want us all to get back there." 

 

 

Makai Sour 

1 ½ OZ MEZCAL OR TEQUILA 

¾ OZ APEROL 

½ OZ FRESH LEMON JUICE 

½ OZ FRESH ORANGE JUICE 

¾ OZ SIMPLE SYRUP

EGG WHITE: 1 LARGE OR 1 OZ 

2 DASHES ANGOSTURA BITTERS 

2 DASHES ORANGE BITTERS 

PINCH OF SALT 

GARNISH: ORANGE PEEL


Dry Shake: Combine all ingredients in shaker WITHOUT ICE. Shake vigorously for 20 seconds. Add ice, seal, and shake for an additional 10 seconds. Double strain into coupe glass. Express orange peel over cocktail. Rub peel around rim of glass & place into drink
